Broccoli Rabe with Parmesan Cheese:
I love the bitter taste of Broccoli Rabe but you can also do it with regular broccoli, broccolini, or a mixture of cauliflower and regular broccoli.
Place about 1” of vegetable or chicken stock in a pan and place the chopped vegetables in and cook them until they wilt. Add Salt, Chicago Steak Seasoning (from Penzey’s spices), and, just before serving, sprinkle with real Parmesan cheese and a robust olive oil.
Salmon with Vegetables:
I love okra, but you can use any vegetable you like. Use the broth method of cooking for better flavor. My technique for okra is simple: I slice it very thin and place it on a hot skillet with a minimum amount of olive oil and cook it until it is charred. You can do the same with zucchini, but add some cumin powder for taste.
As for the salmon, I microwave it for 3 minutes and baste it with a mixture of soy sauce and maple syrup. It’s that simple, and delicious!
Raw Corn Salad
3 ears of organic corn off the cob
1 large heirloom tomato diced and salted
4 scallions diced
1 chicken breast diced and braised in 1” of broth with cumin and chili powder until dry on the pan.
Mix it all with one tablespoon of fig vinegar and one tablespoon of olive oil. Enjoy!

If you do not have an avocado you can do the same with a banana: microwave the ripe banana for 2 minutes and add the maple syrup and the walnuts.
